The Paderno World Cuisine bamboo sushi mat, known in Japanese as a makisu, is a mat woven from bamboo and cotton string, primarily used in the preparation of sushi. These mats are most commonly used to make a kind of rolled sushi called makizushi. After use, a makisu should be washed and thoroughly air dried to ensure hygienic preparation of sushi. It also comes with a wooden rice paddle, known in Japanese as a shamoji. It is used to stir and to serve rice, and to mix vinegar into the rice for sushi. The shamoji is dipped in water frequently during use to prevent rice from sticking to it.
